With the sun shining so brilliantly this week, we’ve been reminded of the European road trip we took together back in 2015. It was on this blissed-out journey, newly in love and long before we had children, or in fact any responsibilities at all, that we first discovered the joy of eating what the Europeans call conservas—the kind of high-quality fish and seafood in beautifully designed cans, that became the inspiration for Sea Sisters. 

We loved how in countries like Spain and Portugal it’s not uncommon to eat conservas straight from the can, or to pour the can into a small bowl, tapas-style, and eat it simply with some good bread, or some salty crisps, always with a cold beer or a glass of vermouth. This often happens, like much of life on the Continent, in the early evening, when the day’s heat has dialled down and the long, cool evening lies ahead.

While we will always love our Cornish Sardines on sourdough toast for lunch, and not much beats our pollack with garlic and bay stirred through a risotto for supper—or for that matter our oak-smoked rainbow trout with eggs for breakfast—enjoying our cans in the early evening sun, with simple snacks and a cold drink, is still hands-down our favourite way to eat our British Conservas.
